How To Make Soft And Spongy Dhoklas – 5 Tips To Follow

This light, fluffy and savoury dish has a cake-like texture and is often eaten for breakfast or even as a snack. It is loved by people of all age groups and is easily available in all parts of the country. However, making them is no easy task. The most common problem faced while making dhoklas is that they turn out to be dry and hard. Ensuring that they are soft and spongy can be quite challenging. 1.Use A Mix Of Sooji And Besan 

The first step in ensuring that your dhoklas turn out to be soft and spongy is to use a mix of sooji and besan. Adding a small amount of powdered sooji to the batter gives it a nice texture and helps in making them fluffy.  

2.Sift Properly

Next, you need to make sure that you sift the besan and sooji properly. While this step is often overlooked, it plays a great role in ensuring that your batter doesn’t have any lumps. It also helps in the aeration process, making it lighter. 

3.Don’t Add Too Much Water To The Batter 

While combining the batter, do not add too much water. By doing so, you can ruin the shape and consistency of your batter as it’ll become too watery. Only add an adequate amount of water until everything is well combined. 

4.Allow The Batter To Rest For Sometime 

Before whisking, allow the batter to rest for around 25-30 minutes. This helps in activating helpful bacteria and gives it a fluffy texture. It also helps in removing any remaining lumps from the batter.  

5.Don’t Whisk For Too Long 

Once done, add fruit salt or baking soda to the batter and whisk it very gently. Whisking it for too long won’t give you the best results. As soon as everything is well combined, pour it into a tray and steam it on high heat.
