Over the years, this Middle Eastern dish has seen some changes. The pita bread was replaced with maida roti/rumali roti, and the masala mix started including various desi spices. But one thing’s for sure – the desi shawarma we have today tastes delicious!

Making shawarma masala is easier than you might think. You just need the right ingredients in the right proportions. Here’s a recipe from Chef Ajay Chopra. Take a look.

Start by adding whole Kashmiri red chilli, green cardamom, black peppercorn, fennel seeds (saunf), cumin (jeera), coriander seeds (dhania), and cinnamon to a pan. Toast them well.

Once they cool down, transfer the spices to a blender and grind them into a fine powder. And there you have it – fresh, aromatic shawarma masala ready to be used. Transfer the masala to an airtight jar and store it.
