How to Make Tadke Wali Dahi Bhindi – Unique Recipe:

1. Wash, pat dry, and trim the head and tail of 1 kg of ladyfinger. Keep it aside. The cooking process begins with a splash of mustard oil. Heat 2 tablespoons in a pan, add 1 tablespoon each of cumin, fennel, and coriander seeds. Add the bhindi and saute for 5-6 minutes until the ladyfinger turns tender and golden. To the pan, add 1 tablespoon Kashmiri red chilli powder, 2 tablespoons coriander powder, 1/2 teaspoon turmeric, and salt to taste. Give everything a generous mix.

2. As the ladyfinger reaches the 60% cooked mark, introduce 3 chopped tomatoes to the mix. Cover the pan and let the tomatoes cook. In a separate bowl, whisk together 1 cup of curd, 1 tablespoon each of mustard oil, Kashmiri red chilli powder, coriander powder, and 1/2 teaspoon turmeric. To this velvety mixture, add 2 tablespoons of besan (gram flour) and salt to taste. Ensure a smooth blend, free from any lumps.

3. Once the bhindi is cooked, pour the yogurt mixture into the pan. Sprinkle in 1 tablespoon kasuri methi, ensuring the flame is low. Stir gently. Then add 1/2 cup of water and 1 teaspoon of jaggery to the mix. Allow it all to simmer and meld for 4-5 minutes.

4. Tadka Finale: No Indian dish is complete without the grand finale of tadka. In a separate pan, prepare a tadka by heating 2 tablespoons of ghee. Add 1 teaspoon of coriander seeds, 2 tablespoons of raisins, 1 teaspoon of red chilli, and 1 teaspoon kasuri methi. Let this aromatic concoction infuse into the bhindi, completing our culinary creation.
