Be it fresh water prawns or king-sized prawns, both need to be peeled and deveined before cooking. Start by pinching behind the head of the prawn and slowly twist the body. Now pull the shell and legs and keep them aside. Next, you can remove the tail if you want, or else you can keep it as is. Put a tiny slit on the back and pull out the black string to devein the prawn. Do the same with each piece of prawn.

Tamarind, also known as imli in India, is the star ingredient of the dish. Using tamarind in the recipe will add tanginess to the dish which will be balanced with the spiciness of chillies and ground spices. To make this at home, you will need one cup of raw tamarind. In a pan, pour water and give it a boil. Now add tamarind to the hot water and let it boil for 2-3 minutes. Once boiled properly, take out the tamarind from the water and de-seed them. Further, make a paste of the soft tamarind skin and add 2-3 spoons of leftover boiled tamarind water in it. Mix well and your tamarind sauce will be ready.
