Gongura mutton curry is one of the most popular dishes in Andhra Pradesh. It is made using gongura (sorrel) leaves, which are the main ingredient in many authentic Andhra delicacies. What sets this mutton curry apart from other mutton curries is the distinct sour taste that it gets from gongura leaves. Juicy pieces of mutton are simmered in a flavourful curry and topped with a crackling tadka. Now, if you’re wondering what to pair with this curry, you should have it with steamed rice, roti, or paratha. It makes for a lip-smacking dish to make for dinner and even serve your guests.
Gongura Mutton Curry Recipe: How To Make Gongura Mutton Curry
To make this curry, first heat the oil in a pressure cooker. Add the mutton pieces and saute for around 2 to 3 minutes. Add red chilli powder, haldi, ginger-garlic paste, and salt. Mix well, and then add 1 cup of water. Pressure cook the mutton for 5-6 whistles. Now we need to prepare the gravy. For this, add gongura leaves, chopped onions, green chillies, haldi, red chilli powder, salt, and water to a wok. Mix well and cook until the gongura leaves have wilted nicely. Allow the mixture to cool down, and then transfer it to a blender to form a smooth paste. Add this paste to the cooked mutton and add cumin and coriander powder. Let it simmer on low heat for a few minutes. Top it with a tempering made of red chillies, curry leaves, mustard seeds, urad dal, and garlic cloves. Serve hot with rice or roti, and enjoy!
